One of my kids favorite meals is good ole’ mac and cheese. Although I usually make Annie’s Macaroni and Cheese, I have started to love this alternative homemade version of mac and cheese.
Sometimes I just make and use Annie’s version and add in broccoli, avocado, canned chicken, or any variation of add-ins to make it a little healthier, but leaving out the processed cheese mix always makes me feel a little better about a pasta lunch or dinner.
For this recipe I start out with just making any variety of pasta that sounds good. I like Costco’s organic pack of noodles, but any noodle variety would work. After cooking and draining the pasta, I add in about 1/8-1/4 cup of Plain Greek Yogurt and a drizzle of Avocado Oil. Once that is mixed in, I add in a handful of shredded cheese (I have a whole bunch of Mozzarella and Parmesan on hand, but Cheddar and Pepper jack work great too).
After the cheese is mixed in, I throw in 1 cut up Avocado and a can of Tuna or Chicken of the Sea. My kids and I have simple tastes and don’t like too much going on, but I always add in some salt/pepper or another spice (like Sweet Mesquite) for a bit more of a kick.
I like to garnish with a little extra sprinkle of cheese and avocado on the top to make it extra pretty, and give it some extra cheesy goodness.
And there it is! One of my favorite go-to meals, which usually has a good amount of left-overs for me to take to work, or for kids lunch’s the next day.
